After years of dreaming, Paper Moon Pastries will OFFICIALLY open its doors to the public on May 21st, 2022, and I. Cannot. Wait.

This process has been exhausting but incredible. I’ve had this little bakery living in my head for years now, and seeing it come to life is similar to the experience of painting a piece of intricate art—it’s time consuming and surreal to watch it take shape in reality.

The sweetest part about this art project is I can share it with everyone I love— literally. Whether it be through conversations over coffee or finding a new favorite treat, this is art we can all take part in. And nothing can beat meeting friends and drawing this community closer together over a homemade kolache.

Which brings me to the community aspect of Paper Moon. I’ve been moved each day by the astonishing amount of support I’ve received from friends, family, the community, and even complete strangers. I certainly could not have tackled this venture my own, and I can’t even begin to accurately express how deeply grateful I am for each and every one of you.

I’m just getting rambly now I suppose. All I know is I’ve experienced an incredible amount of joy throughout this process, and the best I can do now is fire up the ovens and try to give some of that back to the community of Cortland, one cinnamon roll at a time.
