Actually Promising the Moon
Y’all. It’s happening.
It’s finally happening.
Like, actually finally happening!
Paper Moon officially has a home address in Cortland. An actual address in an actual building that actually functions as a perfect little bakery without needing to completely be revamped. I could ramble for days about how excited I am, but I think for now that can go unsaid.
Here’s what you need to know:
Renovation of the new Paper Moon building is currently well underway!
The optimistic goal is to have doors open to the public around Christmas time this year, though (as we’ve all learned) unforeseen circumstances could potentially change that. I don’t want to promise too much, so let’s just say the projected opening date is Spring of 2022. I work full time on top of this endeavor and am doing a majority of the renovating on my lonesome, so it’s a slow but steady process.
I’ve already torn down walls to open up the space, picked wall colors, flooring, and laid out the kitchen. So now renovation includes scraping glue off of the floor, installing new flooring, painting, rewiring electrical for the ovens, and getting plumbing set up for the sinks. (I’ll be posting more in-depth video updates to keep everyone informed/entertained on progress. If anyone is bored or wants to lend their knowledge of furniture stripping/staining or floor scraping or even just wants to tell me fun stories as I paint and swear at the drywall, I’d love any assistance I can get with the process. I pay in unlimited cookies and dad jokes ;)
A majority of the baking equipment (including the monstrous mixer pictured below) and furniture for the seating area have been secured, so now it’s really just a matter of putting it all together!

After almost completely giving up on this dang idea, everything is starting to fall into place, and I cannot wait to get in there and start baking. The next few months are going to serve me a decent helping of hard work, but I am over the moon with excitement. I can’t wait to unite our little community through Paper Moon, whether it be over a sweet treat or unique local events. Which, speaking of, be on the lookout for some upcoming events this fall, including a First Annual Chili Cook Off as well as a cycling event to prep for opening day!
